Buckwheat is a gluten-free cereal, a good source of fibre, rich in minerals and various plant compounds, especially rutin. Buckwheat consumption may therefore be associated with a number of health benefits, including improved blood sugar control and heart health. Cooked buckwheat has a nutty, roasted flavour and a soft texture.
Recommended consumption: Buckwheat can be pre-soaked for 6 hours and then rinsed. Alternatively, rinse well with fresh water and boil 1 ½ cups of water in a small saucepan. Add 1 cup of buckwheat, bring back to the boil, then reduce the heat to a simmer, cover and cook until tender, 10-15 minutes (if the buckwheat has been pre-soaked, it will take 3-5 minutes). You can use it as a base for breakfast, in salads or mixed with vegetables and beans.
