The small, kidney-shaped cashew nut is the fruit of the evergreen cashew tree.
The slightly sweet kernels of TRS cashew nuts are rich in vitamins A, B and D and unsaturated fatty acids and can be eaten raw, salted or roasted.
Cashew nuts or kernels are a popular snack and food source. Unlike other fatty tree nuts, cashew nuts contain about 10 % starch by weight. This makes them more effective than other nuts in thickening water-based dishes such as soups, meat stews and some Indian dairy desserts. This unusual characteristic makes cashew nuts more widely used than other nuts in many south-east and south Asian cuisines.
