Culinary grade matcha tends to have a more pronounced, less subtle flavor to blend with other ingredients.
Matcha is a fine powder made from green tea leaves. It has a bright emerald green colour and a rich vegetal flavour. The tea plants from which matcha is made are shaded for the last few weeks before harvesting, resulting in dark green tea leaves that are higher in chlorophyll, caffeine and l-theanine. The harvested tea leaves are steamed to stop the oxidation process. They are then ground into a fine powder with stones and packaged for sale.
