The pulp of Tamarindus indica (Tamarind, Makham) legumes, native to East Africa and also grown in Asia and India, contains plant acids, sugar and potassium. It is commonly used to maintain balanced digestion. The mild, slightly sweet-sour taste has made tamarinds a coveted classic in Indian and Asian cuisine.
According to Ayurvedic traditions, tamarind paste is used to promote Agni ("digestive fire") without removing Pita dosha from balance, like other acidifiers such as vinegar. Tamarind paste has a very mild and balanced acidity.
